I love big bowls of salads with nearly every meal. As a side to a bowl of soup, or even as a meal in its own right, I love finding fresh seasonal produce and creating something that is tasty and good for you all at the same time. I love the way that the fennel and apple and lemon work together in this favorite winter salad. Bon Appetit!
Salad with apple and fennel
1 apple (I used a pink lady)
1 fennel bulb
Juice and zest of one lemon
1 tablespoon olive oil
1 shallot minced
1 teaspoon of dijon mustard
a handful of pecans
Mache or another mild green (like a butter lettuce)
Salt and pepper
In a large bowl, add the minced shallot, mustard, oil and salt and pepper. Zest the lemon and add in the juice. Whisk with a folk and set the side. Thinly slice the apple and the fennel (you could use a mandoline if you have one) and add to your vinaigrette and toss. Add in your lettuce and pecans and perhaps a few slices of cheese.

A local restaurant makes a variation on this adding parsley to the dressing. At home I add parmesan cheese (sometimes goat cheese) and chopped bacon: YUM!
