Last week, I was in New York – celebrating a dear friend’s
birthday, shopping for client projects and meeting with some of my New York
clients.
The meeting that topped them all was with my client, who
invited me to her home in Short Hills and made me the most beautiful
lunch. We chatted for hours about
the next plans as we sat around in her recently remodeled kitchen. She made a delicious butternut squash
soup and a salad with kale that I haven’t been able to get out of my mind all
week.
I recreated it over the weekend, and just had to share. Healthy, flavorful and easy.
Kale salad with avocado, pistachios and currants
1 bunch of kale
½ cup of pistachios
½ cup of dried currants
1 avocado cubed
juice of 1 lemon
½ cup of grated Parmesan cheese
2 tablespoons olive oil
salt and pepper
Wash and chop kale, add all ingredients into one bowl and
toss.
