I love vegetables. I always have. If I had to name one as my favorite, I think that the artichoke might top the list.
This summer I have been making them a few times a week. They grow in abundance in Castroville, not too far from San Francisco.
Here is my new favorite way to serve them.
Simple and easy and so flavorful.
Artichokes (trim the prickly ends of each leaf with a scissor)
Slice in half (the long way)
Boil in salted water for around 45 minutes.
Drain and dry off.
Place on a baking sheet. Drizzle with olive oil, a large amount balsamic vinegar, salt and pepper and dried herbs (Herbes de Provence, or oregano or thyme. Really whatever you have on hand). Squeeze 1 lemon on top. Red pepper flakes if you like to add a bit of a kick.
Grill in a preheated oven at 450 for around 20-30 minutes.
These come out perfectly grilled and flavorful.
A perfect snack, appetizer or a side dish or tossed in
pasta.
These will become a new favorite. I promise.
